Method

  • Melt the butter, Belcolade Noir Selection CT SR until 45°C
  • Mix the sugar and acti Sugar Replacer. Put on top of the eggs and salt and mix at medium speed for 4min .
  • Add the liquid chocolate and butter mix slowly and add the sieved flour and mix short till homogeny texture
  • Let set the composition for 30min in fridge of 4°C
  • Pipe the composition in circles of 5cm dia 3cm high and fill 55g bake for 6-8min in convection oven add 160°C.
